Our family meal plans and uses several of these ingredients for multiple meals, post prep, so the measurements are approximate only.
Portion: this recipe is modified for (2) active adults with ‘healthy’ appetites
This recipe is meant to be modified to keep it simple and can be adjusted to suit any ‘picky’ eaters as needed! If your family hates mushrooms, just take them out and add a little more meat or ‘starch’
½ pound Ground Turkey (about 2 cups)
Sautéed with seasonings of choice
We typically only use Worchester to season our ground meat as it may be used in several recipes, and add other flavors and seasonings at the last step or just before serving.
(2) large green Bell Peppers (or three – four if the peppers are small)
Cored (top stem and seeds removed) but not cut
(1) small green, yellow or red, bell pepper
(1 ½) cup of mushrooms and diced onions sautéed
I usually add dried minced or fresh pressed garlic, and cook these ahead of time to use in various recipes
(1) Jar Marinara or Spaghetti Sauce
We use Newman’s Own, as I love the flavors, price, and adaptability of this marinara, but canned tomato sauce or whatever is your favorite “red” sauce of choice.
(3 ½) cups cooked rice, or rice substitute (such as cauliflower rice, quinoa, or any grain/grain substitute)
We use cauliflower rice and LOVE it! See note below on how to make it.
(1 ½) cups Mozzarella cheese
Pre-Heat oven to 350
Sauté ground turkey adding the diced pepper, onions, and mushrooms and cook through
Add the rice or rice substitute
Add about ½ the red sauce of choice to the meat and veggie mixture
Stuff your large green Bell Peppers with your meat, sauce and veggie mixture and place in a baking dish
If you have ‘extra’, simply put the mixture in the dish around the peppers
Top the peppers (and any additional meat mixture) with additional red sauce and cheese
We like our peppers extra ‘saucy’, but you may prefer a little less sauce on yours!
Cover your peppers with aluminum foil and bake in the oven for at least 45 minuets
Remove the foil and change the heat setting to “Broil”
